The present work aims to understand how the potato was introduced and how it spread in Trás-os-Montes, during 18th and 19th centuries. The objectives of this study are, therefore, centered on the analysis of the specific conditions that favored the appearance of the potato in Trás-os-Montes and its consequent diffusion. It is intended, therefore, to analyze how food consumption habits and living conditions have evolved as a result of the spread of the so-called «second bread from Trás-os-Montes», as well as the changes in the landscape and in agriculture as a direct result of the expansion of its cultivation by crossing information collected from choreographies, geographical descriptions, economic memories and post-mortem inventories, among other sources, we intend to compare the results obtained with previous existing information on the cultivation of potatoes in Trás-os-Montes.
