Utilização da proteómica para compreender o comportamento de ingestão

Proteomics and ingestive behaviour

RESUMO

O comportamento ingestivo é regulado, entre outros, por factores afectivos, os quais determinam diferentes preferências. A escolha da dieta depende de experiências anteriores, bem como do nível de percepção gustativa, estando a saliva envolvida neste último. As proteínas salivares desempenham papéis muito diversos que incluem a lubrificação, digestão, protecção contra microorganismos e factores antinutritivos, e têm um papel decisivo na transdução do gosto. A nossa abordagem ao estudo do comportamento ingestivo utiliza a proteómica para identificar e monitorizar a expressão das proteínas salivares. A palavra proteómica é utilizada para descrever o estudo do proteoma, ou seja, a medição simultânea da totalidade de proteínas de uma matriz biológica. Temos como objectivo contribuir para uma melhor compreensão dos mecanismos envolvidos na regulação do comportamento em pastoreio, através do estudo do proteoma salivar de cabras e ovelhas, cujas preferências gustativas diferem.

 

ABSTRACT

Ingestion behavior is controlled, among others, by affective factors, which lead to different preferences. Diet selection depends on animal past experience as well as taste perception, in which saliva is involved. Salivary proteins have diverse functions, which include lubrication, digestion, protection against microorganisms and antinutritional compounds and have an important role in taste transduction. Our approach to the study of feeding behavior uses proteomics to access expression profile and to identify salivary proteins. The word proteomics is used to describe the study of proteome, i.e. the simultaneous measurement of the entirety of proteins from a biological matrix. We aim to contribute to a better understanding of grazing and browsing control mechanisms through the study of sheep and goats salivary proteome, species that show different diet preferences.
