Abstract

The OIV (International Organisation of Vine and Wine) is an intergovernmental organisation with competence on the world of Viticulture and Enology. In their activity, the enological practices accepted internationally are recognised by Resolutions approved in General Assembly. In last years, an important number of these Resolutions were approved, concerning enological practices with general application and others completely news in Enology. The complete description of these practices is collected on the files of the " International Code of Enological Practices", document of international reference, published by the organization. In this Technical Note, we presented briefly these practices with reference to respective Resolutions OIV and any limits to their application. To some practices we presented any comments about their applicability based namely on the activity of "Estação Vitivinícola Nacional" (Portugal), published in recent bibliography.
