CABO, Paula; MATOS, Alda; FERNANDES, António  e  RIBEIRO, Maria. Evolution of production and marketing of traditional qualified products from sheep and goat (2003-2012). Rev. de Ciências Agrárias [online]. 2017, vol.40, n.spe, pp.421-430. ISSN 0871-018X.  https://doi.org/10.19084/RCA16197.

This paper analyzes the production and marketing of qualified products from sheep and goat (meat and cheese), using secondary sources. The results show the decreasing relevance of qualified lamb meat in the domestic production. However, generally, producers are able to explore the added value of qualification in terms of price. These lambs are marketed by producers associations, for medium and large grocery stores, and are destined to local/regional and national markets. Regarding goat meat, the Cabrito Transmontano was the one presenting greater stability in production. The qualified goat kids’ are generally traded by producers associations for domestic market, while medium and large grocery stores and restaurants are the most usual marketing channels. The sheep cheeses present, on average, a differential of 23% between the prices of qualified products and similar products. For goat cheese, the qualification label is losing advantage, since it not always means a price increase to producers. The sheep cheeses are predominantly traded by producers in domestic market, preferential for medium and large grocery stores. The goat cheese is marketed entirely by producers’ association, for local/regional and national markets and the preferred marketing channel are processing enterprises, producers’ associations and packers.
