Eosinophilic esophagitis is an esophageal chronic inflammatory disorder of emerging character, immune-mediated and characterized by symptoms related to esophageal dysfunction and esophageal mucosal infiltration by eosinophils. It is essential to exclude other pathologies that course with a mucosal infiltration by eosinophils. Allergic responses to food and aeroallergens have been increasingly implicated in the etiology of this disease, so that the allergological evaluation plays an important role in the study of these patients. The identification of allergic sensitization can optimize treatment, namely in dietary counseling, associated with swallowed corticosteroids and, in more severe cases, oral corticosteroids and esophageal dilatation. The natural history is not yet well known but seems to be chronic and relapsing. Currently, there are no set guidelines for the treatment or follow-up of these patients.
