Abstract

This review focuses on Nutrition and Nursing. The dominant biological perspective defining the lines of thought in the nutritional field is an epistemological obstacle to considering the individual as a holistic being. Aims: to identify the different components involved in human food, from a multidimensional perspective, and to analyse nurses’ approach in the context of food users. Methodology: a bibliographic review was carried out using online sources of data. The Scientific Electronic Library Online, the B-on (Biblioteca do Conhecimento Online), the Google Scholar, the Portuguese Ministry of Health and the World Health Organization sites were the data sources used. Discussion: nutrition is considered to be a complex subject of intervention. Conceptual directions were identified and analyzed which discount standardized and subordinate actions based simply on biological and nutritional principles. Conclusion: nutrition should be analyzed in the light of inter and transdisciplinary perspectives and not reduced to a specific knowledge area. It is proposed that nurses, who are used to understanding food from nutrient and physiological points of view, include other disciplinary approaches in order to provide a comprehensive diet.
