Abstract

Food is a basic requirement for the perpetuation of a people and plays an important role in the consolidation of a culture. Ethnographic studies on ways of life of population groups, performed by classical authors such as Evans-Pritchard or Lévi-Strauss demonstrated that food is a fundamental element in the development of cultural identity of community, constituting one of the barriers of resistance to change. The study of the dietary habits has a vital role not only in the individualization of the food tastes of each individual, but also in the factors involved in the choice of food. For researchers in the field of nutrition, it is imperative to understand the correlations between the human being and food, in which predominates a logic induced by coexistence and socialization.
