Abstract

Although scientists have already understood the importance of organizational culture on food safety this concept is still not widespread. With this article we intend to describe the concept of food safety culture and highlight its role in changing peoples’ behaviors and in the promotion of consumer health protection. In order to do it, we made a review of the main literature on the subject. The main factors that enable the development and characterization of food safety culture will be discussed.
