Tendo como objectivo fundamental contribuir para uma melhor clarificação da microbiologia da cortiça durante o processo árvore - produto final, efectuou-se um estudo sobre as populações fúngicas associadas à árvore, procurando avaliar, num contexto mais amplo, a sua importância como fonte de contaminação das pranchas e do produto final (rolha). Por outro lado, procurou-se através da reunião de informação dispersa sobre a microflora da cortiça ao longo das diferentes fases da sua fileira, integrar os conhecimentos e construir uma base sólida e coerente de conhecimentos para a projecção de novas linhas de investigação nesta matéria. A integração dos resultados das duas componentes, permitiu as seguintes conclusões: a microflora sofre alterações ao longo das diferentes fases da fileira sobreiro - cortiça, reflectindo as diferentes condições ambientais e métodos usados, mas parte das populações isoladas da árvore persistem no produto final o que mostra que a árvore constitui, com grande probabilidade, uma fonte importante de contaminação; uma parte destas populações inclui-se no grupo das que são citadas como capazes de produzir metabolitos secundários implicados na depreciação da cortiça e alteração das características organolépticas do vinho; não foram verificadas diferenças significativas entre a diversidade de populações e o grau de vigor das árvores pelo que, à luz do conhecimento actual, não é legítimo estabelecer uma associação entre o chamado "declínio do sobreiro" e o "gosto a rolha"; a existência de um elevado volume de informação pulverizado e nalguns casos impreciso, dificulta a construção de um quadro de conhecimentos consistente, o que aponta para a necessidade de implementar um programa de acções equilibrado que integre os vários parceiros envolvidos nas diferentes fases da fileira sobreiro - cortiça.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Several microorganisms have been considered responsible for decrease in cork quality and wine off - flavours. To improve the knowledge on cork microbiology throughout the tree to end product (stopper) steps, the work developed included two components. The first, on fungal populations colonising the tree, aims to evaluate the probable role of the tree as source of both slab and stopper contamination. The second focusing the collection of dispersed information about the microbial populations, throughout the industrial cork steps, has a main objective to constitute a basis for the delineation of further studies on this matter. The integration of results allows the following conclusions: (i) the microbial populations change throughout cork manufacture process, reflecting both the different environmental conditions and methods used; (ii) the persistence of a large part of these populations throughout the several phases (tree to end product), indicates that the tree is, probably one of the most important microorganism source; (iii) a fraction of these populations included in the group are pointed out as capable of producing secondary metabolites that affect both cork and wine quality; (iv) no significant differences between microbial population diversity and tree vigour level were found. The results obtained did not allow a relationship between decrease of tree vigour and wine-off flavours. Dispersed and sometimes inaccurate information makes it difficult to build a consistent knowledge frame, indicating that a well - balanced multidiscipline research program including all the partners involved in cork processing, is an urgent necessity.]]></p></abstract>
<abstract abstract-type="short" xml:lang="fr"><p><![CDATA[Un grand nombre de microorganismes a été rapporté comme responsable pour la dégradation du liège et l'altération de la qualité du vin, généralement désignée comme «goût de bouchon». Pour perfectionner la connaissance sur la microbiologie du liège tout au cours des phases arbre - bouchon, le travail développé a comporté deux composantes. La première envisage l'amélioration des connaissances sur la mycoflore associée à l'arbre pour évaluer son probable rôle dans la contamination des planches et des bouchons. La deuxième vise à compiler et à intégrer des informations pour l'implémentation d'études sur l'effet de microorganismes dans la qualité du liège et du vin. L'intégration des résultats des deux composantes permet d’obtenir les conclusions suivantes: les populations microbiennes changent tout au long du processus arbre-bouchon à cause de différentes conditions d'environnement et méthodes employées; du fait q'une partie des microorganismes qui colonisent le liège, avant l'écorçage, est aussi détectée dans le bouchon,l'arbre est probablement une des plus importantes sources de contaminations; une partie des populations détectées est comprise dans le groupe de celles qui ont été référées capables de produire des métabolites secondaires responsables par altérations de la qualité du liège et du vin; la diversité de la microflore ne diffère pas significativement parmi les arbres qui présentent différents degrés de vigueur; les résultats obtenus ne sont pas favorables à l'hypothèse qui considère le dépérissement du chêne liège comme une cause probable du «goût de bouchon». A l'égard de la synthèse de ce sujet, il a été vérifié qu'il y a un grand volume d'information, dans la plupart des cas, dispersée et imprécise, ce qui rend très difficile l'obtention d'une base de connaissance consistante. Cette constatation suggère qu'il faut établir un programme de recherche multidisciplinaire et équilibré englobant les secteurs engagés dans le processus arbre-bouchon.]]></p></abstract>
