Após esta fase, o leite humano já não supre sozinho as necessidades de macro e micronutrientes da criança, propiciando o início da alimentação complementar. Este é um período de grande preocupação para os pais e cuidadores, em que não sabem o que devem ou não oferecer às crianças. Tanto a quantidade de nutrientes quanto a consistência adequada devem ser considerados. Atualmente, existe uma gama de alimentos infantis industrializados, entre eles se destacam as papas, que se apresentam salgadas e doces e oferecem praticidades aos pais e cuidadores. O objetivo do presente estudo foi de comparar os valores nutricionais e as características organolépticas, com exceção do sabor, de papas industrializadas e naturais. Foram selecionadas aleatoriamente duas marcas que comercializam papas industrializadas no Brasil, sendo que os seus ingredientes e composição nutricional foram analisados e em seguida organizados para comparação com as papas naturais. As papas naturais foram preparadas no laboratório de gastronomia da Universidade de Franca, fotografadas e seus ingredientes e nutrientes foram analisados, com o auxílio da Tabela Brasileira de Composição de Alimentos. Além disso, o custo de ambas as papas foi levantado. Notou-se uma importante variação nutricional, especialmente nos valores energético e de glicídios. A adição de espessantes e aditivos químicos nas papas industrializadas, foi um ponto importante para a comparação. Foi constatado que a presença de sódio em alimentos industrializados, é mais significativa do que em alimentos naturais. Outro aspecto analisado foi a consistência e viscosidade das papas industrializadas, que se mostram inadequadas por não estimular a mastigação na fase de introdução da alimentação complementar. Por fim, o custo das papas industrializadas foi três a quatro vezes mais caro do que as naturais.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT Exclusive breastfeeding up to 6 months of age is indicated by the World Health Organization. After this phase, the mother's milk no longer supplies the macro and micronutrient needs of the child, initiating the beginning of complementary feeding. This is a time of great concern for parents and caregivers, who do not know what children should or should not offer. Both the amount of nutrients and the adequate consistency should be taken into account. Currently, there is a range of industrialized infant foods, which offer practicalities to parents and caregivers. The objective of the present study was to compare the nutritional values and organoleptic characteristics, except flavor, of industrialized and natural infant foods. Two brands of industrialized infant food commercialized in Brazil were randomly selected, their nutritional tables and contained ingredients were analyzed and then tabulated, and photos were made for comparison with the natural baby food. The natural foods were prepared in the gastronomy laboratory of the University of Franca, photographed, their ingredients and nutrients were analyzed, with the help of the Brazilian Table of Food Composition and these data were tabulated. In addition, their cost was considered. There was an important variation in nutritional values, especially in the energetic and glucose aspects. The addition of thickeners and chemical additives in industrialized potatoes was an important point for comparison. It was found that the presence of sodium in industrialized foods is more significant than in natural foods. Another aspect analyzed was the consistency and viscosity of the industrialized infant foods, which are shown to be inadequate due to the need to stimulate chewing in the phase of introduction of complementary feed.]]></p></abstract>
