Por outro lado, em idosos institucionalizados, ascende até aos 60%. As dietas de textura modificada surgem como terapêutica de primeira linha, uma vez que diminuem a necessidade de mastigação e preparação oral do alimento.  OBJETIVOS:  Realizar uma revisão da literatura sobre a disfagia, rever a evidência científica atual acerca da importância do impacto das dietas de textura modificada no estado nutricional do idoso.  METODOLOGIA:  A pesquisa para a elaboração desta revisão foi realizada através das plataformas &#8220;Pubmed&#8221;, &#8220;Web of Science (b-on)&#8221;, e &#8220;Scielo&#8221;, através das palavras &#8220;Dysphagia&#8221;, &#8220;Elderly&#8221; e &#8220;Texture-modified foods&#8221;, isoladamente e em conjunto.  RESULTADOS:  Após a análise dos artigos encontrados, com base nos critérios de inclusão definidos, foram selecionados 7 artigos.  CONCLUSÕES:  Após a análise dos artigos selecionados, concluímos que as dietas para a disfagia, particularmente as dietas de textura modificada industrializadas, e a adaptação de fluidos parecem melhorar o prognóstico dos doentes, garantindo maior e melhor aporte energético e proteico, evitando a desnutrição, e ainda proporcionando uma melhor na qualidade de vida dos mesmos.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT  INTRODUCTION:  Dysphagia is present in 30 to 40% community dwelling older adults. In institutionalized older adults, it is even higher, up to 60%. Texture modified diets are the first line of treatment, diminishing the need for chewing and bolus oral preparation.  OBJECTIVES:  To perform a review of the literature on dysphagia, and current scientific evidence about the impact of texture modified diets on the nutritional status of older adults.  METHODOLOGY:  This review was done through the platforms &#8220;Pubmed&#8221;, &#8220;Web of Science (b-on)&#8221;, and &#8220;Scielo&#8221;, with the words &#8220;Dysphagia&#8221;, &#8220;Elderly&#8221;, &#8220;Texture-modified foods&#8221;.  RESULTS:  After analyzing all of the papers found, according to the defined inclusion criteria, 7 papers were included. CONCLUSIONS: After analysis of recent literature, we concluded that texture modified diets, particularly ready-to-use formulations, and thickening fluids, seem to predict better outcomes, ensuring a greater energy and protein intake, and increasing patients&#8217; quality of life.]]></p></abstract>
