Na última década, tem-se constatado um ressurgir do interesse pela bolota para alimentação humana, verificando-se a sua incorporação em diversos produtos alimentares inovadores, embora continue a ser vista por grande parte da população como ração de gado suíno. Sendo um fruto silvestre edível muito abundante em Portugal e detentor de um elevado valor nutricional, acredita-se que a sua valorização para consumo humano pode ser positiva. Assim, foi conduzida uma revisão narrativa da literatura com o intuito de investigar o consumo humano de bolota em Portugal, a respetiva cadeia de processamento e o seu impacto na saúde. Para tal, efetuou-se uma pesquisa, limitada aos últimos dez anos nas bases de dados Medline (PubMed), ScienceDirect, Elsevier, Web of Science, Repositórios de Acesso Aberto e Google Académico. Verificou-se que, apesar da sua variabilidade e limitação de estudos, o consumo de bolota poderá, pela sua atividade biológica e fitoquímica, traduzir-se em diversos benefícios para a saúde, se enquadrado numa dieta saudável. A cadeia de processamento dos seus diferentes produtos tem igualmente potencial para ser desenvolvida e otimizada. Assim, a valorização da bolota para consumo humano e consequente desenvolvimento da respetiva cadeia de valor, poderão contribuir para alimentar as gerações futuras de forma segura e sustentável.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The human consumption of acorn in Portugal was high until around the 1960&#8217;s, and then abruptly decreased. Nevertheless, in the last decade, the interest in acorn for human consumption has resurfaced, with diverse innovative food products incorporating it, although still being seen by the majority of the population as swine cattle fed. As an edible highly nutritious wild fruit that is widely abundant in Portugal, it is believed that its valorization for human consumption can be positive. This way, the aim of this article was to conduct a narrative literature review aiming to investigate the human consumption of acorn in Portugal, its processing chain, and its impact on health. For that, research limited to the last ten years was carried on the databases Medline (PubMed), ScienceDirect, Elsevier, Web of Science, in Open Access Repositories and Academic Google. Despite the variability and limitation of studies, it was verified that due to its biological and phytochemical activity, acorn can bring several health benefits when included in a healthy diet. The processing chain of its diverse products also has the potential to be developed and optimized. Therefore, if valorized for human consumption and consequent development of its value chain, acorn could contribute to feed future generations safely and sustainably.]]></p></abstract>
