Contudo, têm-se levantado questões sobre a sua segurança para a saúde pública e meio ambiente. É também importante considerar o impacto da desinfeção destes hortofrutícolas no consumo de água. O presente estudo teve como objetivos avaliar o impacto da desinfeção de hortofrutícolas no consumo de água (fase I) e no seu perfil microbiológico (fase II). Na fase I, quantificou-se a água consumida na lavagem com água potável (V0 ) e desinfeção com hipoclorito de sódio (70 ppm) seguido de enxaguamento (V1 ). Verificou-se que o volume médio de água consumida em V0 representa 30% e em V1 representa 70%. Na fase II, foram realizadas análises microbiológicas às amostras de hortofrutícolas sem lavagem (T0 ), lavados com água potável (T1 ) e submetidos a desinfeção com hipoclorito de sódio (70 ppm) seguido de enxaguamento (T2 ). Não se verificaram diferenças estatisticamente significativas no perfil microbiológico dos hortofrutícolas entre as três etapas. Os resultados obtidos revelam que a desinfeção destes hortofrutícolas poderá ser dispensável. A eliminação deste procedimento pode levar à poupança média anual de 20 531 477 L de água. Estes dados salientam a importância de reduzir o consumo de água, sem comprometer a segurança alimentar, contribuindo para os Objetivos de Desenvolvimento Sustentável definidos pela Agenda 2030.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The way food is handled can have an impact on food safety. As a result, chlorine-based products are widely used to disinfect fruit and vegetables. However, questions have been raised about its safety for public health and the environment. It is also important to consider the impact of this food sanitation on potable water use. This study aimed to evaluate the impact of sanitizing fruit and vegetables on water consumption (phase I) and on their microbiological profile (phase II). In phase I, water volume was quantified after washing fruit and vegetables with potable water (V0 ) and when sanitized with sodium hypochlorite (70 ppm) followed by rinse (V1 ). The average volume of water in V0 was 30% of the total volume, while the volume in V1 was 70%. In phase II, samples of unwashed fruit and vegetables (T0 ), washed with potable water (T1 ) and sanitized with sodium hypochlorite (70 ppm) followed by rinse (T2 ) were analyzed. No significant difference was observed in the number of conforming results in T0 , T1 and T2 . Therefore, the results obtained suggest that the sanitation of these foods may be dispensable. The elimination of this procedure can lead to medium annual saving of 20 531 477 L of water. These data highlight the importance of reducing water consumption, without compromising food safety, contributing to the Sustainable Development Goals shared by the 2030 Agenda for Sustainable Development.]]></p></abstract>
