<self-uri xlink:href="http://scielo.pt/scielo.php?script=sci_arttext&amp;pid=S2183-59852025000300020&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.pt/scielo.php?script=sci_abstract&amp;pid=S2183-59852025000300020&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://scielo.pt/scielo.php?script=sci_pdf&amp;pid=S2183-59852025000300020&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="pt"><p><![CDATA[RESUMO  INTRODUÇÃO:  As escolas e municípios do distrito de Viana do Castelo têm vindo a manifestar grande preocupação com o desperdício alimentar nas cantinas escolares, tornando-se necessário conhecer a quantidade de desperdício gerado e quais as suas causas, para, posteriormente, implementar iniciativas que visem a sua redução.  OBJETIVOS:  Este estudo pretende avaliar o desperdício alimentar, sob a forma de sobras e restos, no almoço escolar e avaliar a eficiência do serviço de alimentação em cantinas de escolas do distrito de Viana do Castelo  METODOLOGIA:  O estudo foi realizado em 3 escolas, num total de 15 dias de avaliação, 5 dias seguidos ou interpolados em cada escola. Foi avaliado o desperdício alimentar da refeição do almoço, através da quantificação do peso da refeição produzida, peso das sobras e peso dos restos.  RESULTADOS:  Registou-se 30% de desperdício alimentar num total de 4577 refeições servidas, verificando-se um índice de sobra médio de 12% (60% relativo à sopa e 34% ao prato) e um índice de resto médio de 20% (18% relativo à sopa e 66% ao prato).  CONCLUSÕES:  O desperdício alimentar encontrado foi de 30%, com mais ênfase no índice de resto do que no índice de sobra e revela um serviço ineficiente de acordo com a literatura (índice de sobra &gt; 3% e índice de resto &gt; 10%), e a necessidade urgente de adotar medidas que combatam a sua redução.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT  INTRODUCTION:  Schools and municipalities in Viana do Castelo district have been expressing great concern about food waste in school canteens, making it necessary to know the amount of waste generated and what its causes are, in order to subsequently implement initiatives aimed at reducing it.  OBJECTIVES:  This study aimed to evaluate food waste, in the form of leftovers and plate waste, in school lunches and to evaluate the efficiency of food service in school canteens in Viana do Castelo district.  METHODOLOGY:  The study was carried out in 3 schools, in a total of 15 days of evaluation, 5 consecutive or interpolated days in each school. The food waste of the lunch meal was evaluated by quantifying the weight of the meal produced, the weight of the leftovers and the weight of the plate waste.  RESULTS:  There was 30% of food waste in a total of 4577 meals served, with an average leftover index of 12% (60% for the soup and 34% for the plate) and an average plate waste index of 20% (18% for the soup and 66% for the plate).  CONCLUSIONS:  The food waste was 30%, with more emphasis on the rest than on the leftover index and reveals an inefficient service according to the literature (leftover index &gt; 3% and plate waste index &gt; 10%), and the urgent need to adopt strategies to combat its reduction.]]></p></abstract>
